Souper Saturday--Black Bean [Vegetable]

For tonight's soup offering, I started with this recipe from allrecipes.

Black Bean Vegetable

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 carrots, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable stock
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 (8.75 ounce) can whole kernel corn
  • 1/4 teaspoon ground black pepper
  • 1 (14.5 ounce) can stewed tomatoes

DIRECTIONS

  1. In large saucepan, heat oil over medium heat; cook onion, garlic, and carrots, stirring occasionally, for 5 minutes or until onion is softened. Add chili powder and cumin; cook, stirring, for 1 minute. Add stock, 1 can of the beans, corn, and pepper; bring to boil.
  2. Meanwhile, in food processor or blender, puree together tomatoes and remaining can of beans; add to pot. Reduce heat, cover, and simmer for 10 to 15 minutes or until carrots are tender.
My changes:
  • used 1 carrot, shredded
  • used 2-3 cloves garlic
  • used beef broth instead of vegetable
  • did not add corn
  • used diced tomatoes (didn't have stewed)
  • added a few dashes chipotle Tabasco
  • added about 4oz tomato sauce I had in fridge
After adding the broth and one can of beans, I pureed the whole thing with the tomatoes so I got the onions and carrots too. Then I added the remaining can of beans (not pureed). Since I used beef instead of vegetable broth and did not add the corn, I can't really keep the 'vegetable' in the name.

The soup sounded great. I love Black bean soup so thought I would share a simple recipe of mine that I make all the time. I think it may be a WW recipe.

2 cans seasoned black beans
1 can low sodium chicken broth
1 cup salsa
2 tsps. chili powder

Puree l can of beans. Add pureed beans and second can (with juices) to pot. Add chicken broth and salsa...plus the chili powder. Simmer together and serve with grated cheddar cheese. So easy...so good.

Mmm. I think I have all of those ingredients. I'm always looking for a tasty soup. I may just give this one a try. I love that you do a rating of it as well. :)
