Best Movie Snack Evah!

The kids are on spring break this week.  We don’t normally go anywhere, but I try to do a couple of fun things with them during the week.  One thing we like to do have a pajama day/movie afternoon where we close all the blinds and snuggle on the couch watching movies and eating snacks.

One of our favorite movie snacks over the years has been Chex Caramel Crunch.  I got the recipe probably a dozen years ago in one of the Sunday coupon fliers. I looked for it on their website, and while I was surprised to see how many different Chex mix recipes they do have, they don’t have this exact recipe.  So here it is; give it a try on your next movie night!  Fair warning:  it’s addictive!

Chex Caramel Crunch

  • 6 cups Chex cereal, any combination
  • 6 cups popped popcorn
  • 2 cups pretzel sticks
  • 1 cup honey-roasted peanuts
  • 1/2 cup packed brown sugar
  • 1/2 cup light corn syrup*
  • 1/4 cup margarine or butter (do not use spread or tub products)
  • 1/2 tsp vanilla

Heat oven to 350.  Mix cereals, pretzels and peanuts in large bowl.  Heat brown sugar, corn syrup and butter to boiling in 1 qt saucepan over medium heat, stirring occasionally.  Remove from heat; stir in vanilla.  Stir into cereal mixture.  Spread in a large ungreased roasting pan.  Bake 15 minutes, stirring halfway through.  Spread on foil sprayed with cooking spray to cool.  Store in airtight container.  Makes 15 cups.

*My secret ingredient:  I usually use 1/4 cup corn syrup and 1/4 cup maple-flavored pancake syrup.  Yum!

Oh, boy! This sounds yummy! I love pretty much any kind of Chex Mix, but I've never heard of this kind before. Thanks for the recipe!

Years ago we never went anywhere for Spring Break, but now we almost always leave town. And then when we get back to town, I always feel like a need a vacation from the vacation. Right now I'm swimming in laundry!
